Ingredient List:
– 2 tablespoons coconut oil
– 2-3 garlic cloves, cut into small chunks
– 2 Thai Chilies, bash with a knife and cut into 2 halves
– 1 small carrot, dice into medium pieces
– ½ cup kale stems, chop into small pieces
– 200 gram beef, cut into thin slices
– 1 tablespoon oyster sauce
– ½ teaspoon salt
– ¼ teaspoon ground black pepper
-2 cups of kale leaves, slice into thin strips
Cooking Method:
Heat the oil in a large sized frying pan, start by adding the garlic for a minute until starts to lightly brown, then add in the chili and stir around for another 30 seconds. Add in the carrot together with the kale stems and stir until the carrot starts to soften and the kale is bright green. Add the beef into the pan and stir until the beef is cooked 90%, and then add the oyster sauce, salt and pepper. Stir this quickly until mixed and then finish by adding the kale leaves and stir until they start to wilt. Serve this as a dish of its own or together with your favorite rice.
