Yellow Curry Stir Fry


Serves: 2

Ingredient List:

– 2 tablespoons coconut cooking oil (non scented), divided

– 400g Prawns, Chicken or Crabmeat

– 1/2 medium onion, thinly sliced

– 4-5 garlic cloves, thinly sliced

– 1-2 large chili, thinly sliced

– 3 eggs, beaten in a bowl

– 1 tablespoon yellow curry powder

– ½ teaspoon salt

– 3-4 green onion stalks

Cooking Method:
Heat 1 tablespoon oil in a medium frying pan and stir fry prawns until cooked through then set aside. Add remaining oil in the pan the stir fry onion, garlic, chili until fragrant and garlic’s golden brown. Add in eggs and stir quickly until cooked then turn off heat and re-add in the prawns together with curry powder and salt. Stir and mix thoroughly then add in the green onion. Serve together with rice.

Serve with your favorite rice
